Full zip fleeces are the easiest layer to get on and off between jobs. Choose a light microfleece to wear under a jacket, or a heavier or windproof fleece to wear on its own. There are hi vis, flame resistant and anti-static versions for sites that need them.

Weight is the main thing to decide. A microfleece is light and works under a coat or indoors, while a heavier fleece is warm enough to wear on its own through most of the winter. Windproof and bonded fleeces add a barrier layer if your team works exposed to the weather.
A left chest embroidered logo is the standard, and fleece takes embroidery very well. Zipped pockets are worth having for anyone who carries a phone or keys around site.
Many styles have a ladies fit in the same colour, so a mixed team can match.
